This week I had the pleasure of being a featured food writer on Her Sweat - a go-to women's site for all things fitness and living your best life. It was created by two kick ass Millennial women who work in the Entertainment Industry, Niki McGloster & Adelle Platon. Quick story here - I met Niki back in my NYC days when I would pitch her to interview various celebs for film campaigns I worked on while she was an Editor at Vibe. I am SO happy to see that she turned her passion for fitness into Her Sweat, so of course I was over the moon hype that she wanted me to write a healthy recipe for the site.
Thinking about what I wanted to whip up I decided on this quick & easy Curry Chicken Salad wrapped in a Collard Green leave. This recipe is taken from one of my fave food blogger - The Kitchenista Diaries . During the summer months I try and stick to light dishes since I want to stay SNATCHED so this was perfect. I subbed the heavy mayo (even though I love mayo) for 0% Greek Yogurt - I'm telling you, you cannot tell the difference that it's yogurt from mayo and added craisins and apples to give it some extra flava.
