I’m from the DMV (if you didn’t already know lol)…Silver Spring, Maryland to be exact!

What can I say about Mumbo sauce. It’s a DC treasure! It’s sweet and tangy and depending where you have it a little spicy. It’s a takeout treasure! Traditionally, it’s drizzled on fried chicken & fries and the sweet tangy sauce is an amazing compliment to the crispy fried chicken. To me, it’s similar to mild sauce from Chicago. I love how different cities have similar food styles!

Anyway, it was a chill weekend for us over in Brooklyn so I whipped out my air fryer and made my version of mumbo sauce. I went a little heavy on the spice because duh…just add hot sauce BUT you can adjust the spice to how you like. This is def a trial and error recipe! Sometimes I like it more sweet while other days I go a little heavy on the vinegar but it’s really up to you! No matter what…PINEAPPLE JUICE IS KEY!

Ingredients (Makes about 2 cups of sauce)

  • 1/4 cup ketchup

  • 2 cups of pineapple juice (I used more like a cup in a half and added more throughout the cooking process)

  • 1 tablespoon tomato paste

  • 1/2 cup soy sauce

  • 2 tablespoons dark brown sugar

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon cayenne pepper (optional if you don’t like spice)

  • about 1/4 of white vinegar (I like to start with a little vinegar and add more depending how tangy I want the sauce)

    Directions

  • Combine all ingredients together in a sauce pan and bring to a light simmer on medium heat. Be sure to cover it because when it starts to simmer, it will go everywhere lol.

  • As the sauce starts to simmer, it will reduce and thicken slightly. I like to taste throughout the entire cooking process. I like to simmer it for around 20-30 minutes so the flavors really develop.

  • Store in an air tight container. It will keep for around 2 weeks or longer (depending if you use it all lol)

Air Fry Chicken Wings

  • Super simple! Season the chicken to your liking (salt, pepper & favorite everyday seasoning) and turn your air fry on to 400 degrees. I like to air fry it for 25 minutes and at 12 minutes, flip the chicken wings so both sides get nice and crispy!

  • Pour the mumbo sauce all over after the chicken is done and ENJOY!
