Back in college, me and my friends would f*ck these up after a drunken good night! I have a very bad sweet tooth especially at night so I decided to whip these up and they were so good fresh out the oven! Even better if you had some vanilla ice cream.

Now, I am definitely not a baker so these were not your picture perfect hand apple pies but very good. I didnt’t perfectly measure all the ingredients so I woul These would be a great activity with some kiddies too! Try it below and let me know what you think!

Ingredients (makes 5-6)

  • 4 Granny Smith Apples, peeled, cored and chopped into bite size pieces

  • 1/4 cup brown sugar

  • 1/2 teaspoon or more based of taste, cinnamon

  • a dash of nutmeg (nutmeg is strong so you don’t need a lot. I freshly grated nutmeg for a fresher taste)

  • 1/8 teaspoon cardamom (same here, cardamom is powerful so a little goes along way)

  • 1/2 lemon juiced

  • a dash of kosher salt

  • cornstarch slurry as a thickener: 1/2 teaspoon cornstarch & 2 tablespoons of water mixed whisked together

  • 1 store bought pie crust, thinned out a little bit with a rolling pin or wine glass! *wink

  • cinnamon sugar for sprinkling on top (I used raw sugar and cinnamon combination)

  • egg wash (1 egg and a sprinkle of water whisked together)

Directions

  • In a pan add the apples, brown sugar, nutmeg, cinnamon, cardamom & lemon juice. Let the apples cook down for about 10-15 minutes. You still want the apples semi firm and not mushy so be sure to watch them.

  • When the apples are to your desired texture, add the cornstarch slurry. This adds as a thickener so your apple mixture gets slightly thicker.

  • Let the apples cool down before you add them to your pie crust.

  • Pre-heat oven to 425

  • Roll out the pie crust a tad to thin out the crust so you get more rectangles. Divide into 5 or 6 rectangles. Side note: you will get about 3 from the original rolled out crust then you will combine the scraps and then you will get 2 more rectangles.

  • Spoon some of the apple mixture off center so you are able to fold it over and crimp or seal shut.

  • With a sharp knife, add 3 slits on top and brush with some egg wash and then sprinkle the cinnamon sugar on top.

  • Bake in the oven for 12-15 minutes until crust is golden brown!

  • Enjoy with some vanilla ice cream!
